Gluten Free Tuna Casserole

Imagine being on three food restrictive diets. Celiac, Diabetes and Renal diets doesn’t leave a person with too many options to choose from. My (J) diet mostly consists of rice and potatoes which have become a huge bore. I don’t eat tuna often but occasionally I do get a craving for it and if it’s not in a salad it’s in a gluten-free tuna casserole. This allows me to eat pasta for a change since the only pasta I’ve been eating lately has involved lasagna.

Gluten-Free-Tuna-Casserole

What you’ll need:

  • 2 cups uncooked gluten-free macaroni

  • 1 cup of your basic white sauce

  • Chicken bouillon for flavor

  • 1 can of tuna (drained)

  • 1-2 cups of cheese (depends on how cheesy you like it)

  • Gluten-free bread crumbs or cracker crumbs for crunch

Directions:

Cook macaroni. Drain well & set aside. Mix the chicken bouillon into the white sauce. Pour over macaroni. Add tuna. Mix well. Place in a casserole dish and cover with cheese. Sprinkle crumbs over the cheese for an added crunch and bake at 350 F for approximately 20 minutes. Broil on high for approximately 10 minutes or until the cheese starts to brown.

Gluten Free Beef Macaroni

​It’s been a while since I (J) have experimented in the kitchen with gluten-free dishes and eating the same foods all the time gets boring! I decided to try making my own gluten-free beef macaroni that was simple and quick. I really enjoyed it and hope you will too.

Gluten-Free-Beef-Macaroni

What you’ll need:
• gluten-free made or any other pasta you desire.

• 1 lb of hamburger 

• Spices (garlic, dried onions, parsley flakes, pepper

• frozen peas or any vegetable of your choosing.

• 1 ¼ Cup of water (as per the gravy directions)

• 1 package of gluten-free beef gravy

• ¼ cup of milk

Directions:

Fry the hamburger in a large frying pan. Using the same pan, add water. Mix in gravy. Add macaroni and peas. Reduce heat and let it simmer until the macaroni is cooked. You may need to add the extra water as it’s simmering. Keep an eye on it and stir often as the macaroni will stick to the pan!

One Pot Creamy Gluten Free Mac and Cheese

​This one pot creamy gluten free mac and cheese is simple to make and clean up is effortless. It’s seriously delicious, very creamy and the whole family will love it. Promise! The first time that I (J) made this I omitted the cream cheese as it’s a dairy product that’s too rich for my renal diet. I also used Gouda cheese instead of cheddar which turned out more like a feta type texture. I recommend following the recipe, lol.

One-Pot-Creamy-Gluten-Free-Mac-and-Cheese

What you’ll need:
• ¼ cup water

• 1¼ cups milk

• 1 Tbsp butter

• Pepper & garlic powder to taste

• 1 cup macaroni (gluten-free)

• 1 cup shredded cheddar cheese

• 1-2 Tbsp. cream cheese

Directions:

Bring milk, water, butter and spices to a boil. Add macaroni, reduce heat to low and simmer for 20 minutes or until pasta is tender. You may have to add a bit more milk depending on how quickly it evaporates but do so sparingly so you don’t add too much. Remove from heat, add cheeses, stir and cover for approximately 3 minutes.

We love to bake and we also love books so we’re quite excited to introduce you to a deliciously tasty gluten-free cookbook from Penguin Random House Canada . This book is called Sweet Goodness by Patricia Green and Carolyn Hemming , best-selling authors of Quinoa 360.

This cookbook is full of delicious looking gluten-free recipes that require the multiple flours that people with Celiac use and will more than likely have on hand. It also has great information regarding cooking, dry baking ingredients and illustrations that look so good that you could eat the picture, lol. Seriously though, awesome looking pictures!

Gluten Free Chinese Macaroni‏ #HJrecipes

This recipe is pretty simple to make and it really doesn’t take much time, making a great dish for when you’re in a rush.

Ingredients
• 1/2 a box of gluten-free Catelli macaroni
• 1/4 of a green pepper
• 1/4 of a red pepper
• 1/4 of a yellow pepper
• 1 stalk of green onions
• 1/4 of a yellow onion
• 1/4 cup of frozen corn
• 1/4 cup of frozen peas
• oil for sautéing
• VH gluten-free soya sauce
• garlic powder (optional)

Directions

We suggest chopping your vegetables that you want to sauté before doing anything else.

Bring a pot of water to a boil and cook the macaroni until tender. We usually try for the 5 minute mark so that it’s a bit chewy. While you wait for the pasta, place the vegetables in a frying pan and sauté them in the oil until they’re tender. Strain the macaroni and add to the frying pan with the vegetables. Mix well. Add the amount of soya sauce you think fits and sprinkle with garlic powder. Allow the to sauté for a minute or so and serve.

Simple Treat for the kids! !!!!Pudding Cookies!!! #HJrecipes

The other day I got this awesome idea where I would try to put some pudding in the freezer to see how it would turn out… Well I was quite surprised with the outcome and decided to do something fun with them… I had some smarties kicking around so I decided that they would be my decorations but you can easily use sprinkles for the same effect 🙂 (Its on my next grocery list)

 

So I totally forgot to take a picture before I put them in the freezer but it’s so simple and the kids can even help!!!. Just spoon them onto a cookie sheet lined with parchment paper and decorate as you please!!!!

And this was after they came out.. They pop right off the parchment paper so easily…

I love that they freeze enough to keep from but when you bite into them it’s kind of soft… I made these 9 “pudding cookies” from 2 little containers that you would buy in the packs at the store.. And you can store them in air tight containers in the freezer for at least a good month!!!

They are a quick and less messy option to eating pudding with a spoon 🙂 And the kids just love them!!!!

These are delicious, simple, organic, non-gmo, gluten-free and guilt-free Crunchy PB & Jam Bars using Crofters Organic Jams. The recipe is theirs and the only thing I did differently was mix my strawberry and blueberry jam together to get the spread in the middle 🙂

Crunchy PB&J Bars

Ingredients:

Base and Topping:
1 1/2 cup organic quick-cooking rolled oats
1/4 cup organic whole wheat or all-purpose flour
1 tsp baking powder
1/4 tsp sea salt
2/3 cup crunchy peanut butter
6-8 tbsp maple syrup (to desired sweetness)
1 tsp vanilla extract
1 jar Crofters Organic Four Fruit Premium Spread for fruit filling

Directions:

Instructions:
Preheat Oven to 350F, and grease a 8″ square pan.
In large bowl, mix together oats, flour, baking powder and salt.
In a small bowl, mix together crunchy peanut butter, maple syrup and vanilla extract.
Add peanut butter mixture to dry ingredients, and blend until just combined and crumbly. Set aside 1/2 cup packed dough for crumbling on top. Press the rest of the dough evenly into the pan.
Spread Crofter’s Organic Four Fruit Premium Spread over the peanut butter oat base.
Crumble reserved dough over the fruit spread.
Bake at 350F for 25 minutes, or until topping is golden brown.

Udis Gluten Free is one of our favorite gluten-free companies so when we saw them share their Apple Pie Cups recipe on Twitter we were intrigued and decided that we were totally going to try them! Check out the recipe below or you can find the original HERE.

What you will need:

 

  • 6 small Udi’s tortillas
  • 1/4 cup coconut oil (melted)
  • 2 tbsp. butter
  • 2 Granny Smith apples
  • 2 tbsp. light brown sugar
  • 1 tsp. ground cinnamon
  • whipped cream or ice cream for topping (optional)
  • 1/4 cut toasted hazelnuts (We used Udi’s Snicker Doodles)

Directions:

 

  • Preheat oven to 400° F.
  • Lightly brush both sides of the tortillas with the coconut oil and warm them in a frying pan. Gently place them into muffin tins and bake for 15 minutes.
  • While the tortillas are baking mix the apples, cinnamon and sugar together. Sauté the apple mixture in a frying pan with the butter until tender.
  • Fill tortilla cups with apple mixture, top with ice cream and crumbled Snicker Doodles and serve.

Sweet and Sour Sauce #HJrecipes

It’s hard to find a “new” dish that the whole family loves when it comes to meals and with the little one there’s usually more than one supper made. We decided to make a batch of sweet & sour meatballs for a change and really didn’t think the little guy was going to like them because of the vinegar but low & behold, he loved them! This recipe can also be used for sweet & sour pork, sweet & sour chicken balls , ribs, served over rice or used as a simple dipping sauce. It’s also gluten-free!

What you’ll need:
  • 1/2 cup vinegar
  • 1/2 cup ketchup
  • 1 cup brown sugar
  • 2 tbsp potato starch
  • 2 tbsp soy sauce
  • 1 cup water
Directions:
Mix all ingredients in a pot and bring to a boil on the stove. Reduce heat and allow to simmer. The sauce will seem a bit watery but will thicken as it sets. Add the desired meat and continue simmering until meat is cooked. If you don’t want to add meat, simmer sauce until it reaches a syrupy stage and set aside to thicken.

Gluten-free Breading‏ #HJrecipes

We’re always concocting something in the kitchen, as “fresh” is even more of an essential part of lives now as it’s ever been! Having food restricted diets in our household eating healthier has become a natural instinct and making things from scratch has come along with it. One of our favorite things to do is to slap ingredients together to create a unique but tasty recipe and home-made breadings/batters are perfect for exactly that!

What you’ll need

1/4 cup ground Gluten-free snack crackers (I used Breton)

1/3 cup ground flaxseed

1-2 tsp. spices (I mixed garlic powder, onion powder & parsley flakes as these are safe for a renal diet but you can use any mixture of spices at all)

1 tbsp. parmesan cheese (powder)

1 egg (beaten)

2-3 chicken breasts (depends on size)

 

Directions

In a blender grind the flaxseed, crackers, parmesan cheese and spices until fine like bread crumbs. Dip raw chicken pieces into the beaten egg and then roll in the grinded mixture until evenly coated. If you like you can also add thinly sliced green onions to the breading for extra flavor. Place chicken on a baking sheet and bake for 30-35 minutes in a 350° Fahrenheit oven, do not turn over. Makes 4-6 portion sized servings.

Homemade gluten-free chicken balls

We recently made homemade chicken balls using a very simple recipe that we altered to be gluten-free as well as to our liking spice wise. These were a huge hit with the family that are definitely going to be something we make on a regular basis.
Ingredients:
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 cup potato starch
    1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar
    1/2 cup + 2.5 tbsp water
  • Spices (We used garlic powder, onion powder and black pepper).
  • Cooking oil for deep-frying
  • Cubed raw pork loin or boneless chicken breast
Heat your cooking oil to 375F or 6 for stove top.
Directions:
Cube the raw meat. Mix dry ingredients with the water. It should have the consistency of pancake batter. Mix the cubes of meat in the batter and gently place in the heated oil. Fry until they looked cooked, roughly 5 minutes on each side. Serve with pineapple, cherry sauce or whatever sauce you like.

We love making these simple chicken balls often and everyone enjoys them so the Mrs. decided to switch up the all-purpose flour with rice flour and a ¼ tsp. of xanthan gum. WOW is all I (J) can say! The rice flour gave them a delightful crispiness on the outside and a fluffy inside just like the Chinese restaurant we were used to eating at before my Celiac diagnosis. Fabulously amazing!

Slow cooker ribs with homemade BBQ sauce

Ingredients

  • 1 cup Ketchup
  • 1/2 cup Onions
  • 1/3 cup Water
  • 1/4 cup Mustard
  • 1/4 cup Butter
  • 1 tbsp Paprika
  • 1 tsp Brown sugar
  • 1/4 tsp Pepper
  • 2 tbsp Lemon juice
  • 1 tsbp Worchester sauce

Directions

  •  I usually double up on this recipe for the ribs.
  • I put some garlic salt, herbamare and pepper over the ribs as they wait for the BBQ sauce.
  • Mix all the ingredients in 1 bowl and whisk it. It will look clumpy but that’s normal.
  • Typically we like to make these slow-cooker ribs as the meat falls off the bone! For this we simply place the ribs in the slow-cooker,  pour the bbq sauce over them but our slow-cooker is broke so I turned the oven on to 200 degrees Fahrenheit this morning around 9 and let it cook until Supper.
  • Serve over white rice…

GlutenFree Chicken Stew

I seriously NEVER measure these things, I just cut up using my judgement and until there’s not much room left in the pot. We love stew and its even better the next day! (or if you have left overs,  it freezes well also)

Ingredients
  • Potatoes
  • Turnip (optional)
  • Carrots
  • Onions
  • Celery
  • Chicken stock (homemade of course)
  • Chicken
  • Mushrooms (optional)
  • Yellow or green beans (optional)
  • Spices
Directions
  • Put the chicken on to boil in a large pot, filled half way with water. Add your spices to the water and let it boil until it’s cooked.
  • In the meantime chop up your vegetables into the size you want.
  • Once the chicken is cooked, remove it from the boiling water and cube it up. *Don’t throw away your water, this will be the base for your stew. It has all the delicious flavors blended into it.
  • Then put all your vegetables and chicken into the pot and let it simmer for an hour or so, (I usually have it on 3-4 for the hour, stirring every now and then.

Gluten Free Cauliflower Crust

Ingredients

  • 2.5 cups grated cauliflower
  • 1 egg slightly beaten
  • 1 1/4 cups shredded/grated cheese

 

Directions

  • Line a rimmed baking sheet/pan with parchment paper &  the oven to 425° F.
  • Grate cauliflower & microwave for 7-8 minutes or until it’s soft. Set aside to cool!
  • Mix the egg with the grated cheese. Remove any excess juices from the cauliflower using a cheese cloth or paper towels. Mix the egg & cheese into the cauliflower and pat into the lined baking sheet/pan.
  • Bake for 10-15 minutes or until golden. For a crispier crust bake for 20-25 minutes. Add your favourite pizza ingredients bake for an extra 10 minutes and you have the best tasting healthy pizza that anyone will ever eat!

* I personally like to add spices such as garlic powder, celery salt, pepper,  green onions and dried chive rings to give a bit more flavour to the crust. These can also be frozen for later use.
