Beautiful Beef Roast

I (J) have been cooking for many years now and love doing my own thing with whatever meal I’m making. One thing that I’ve always done despite hearing and reading that you shouldn’t is cooking meat from frozen. I ONLY do this with meat that is being cooked in the oven and at a lower temperature for a longer amount of time. It makes one beautiful beef roast that’s a hit with the little one and it’s also one of my favorite meats to cook/work with.

Normally, I pour ¼ cup of beef broth, a splash of vegetable oil and desired spices onto the roast for seasoning and put it in the oven at 200°F for 2½-3 hours basting occasionally as well as removing some liquid as it builds up. I then turn the oven up to 300°F and cook it for another hour basting every so often to avoid drying it out. When that hour is up I increase the temperature to 325°F for the remaining hour making sure to baste a few times.

The fact that the little one asks for seconds of this should say it all, lol. While beef roasts aren’t exactly cheap, we try to pick a few up when they’re on sale and freeze them for future use.

#HJrecipes Chip Battered Chicken

This tasty recipe is sure to be a crowd pleaser and it’s seriously simple!

This version was made for a renal diet with only 1 serving of chicken per week but can easily be doubled or even tripled depending on the amount of people being served.

What you’ll need:

1 boneless skinless chicken breast
1 tbsp. mayonnaise
1 cup of chips (any flavor)
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. parsley flakes
pepper to taste

Directions:

Chop the chips and spices in an electric food chopper. Coat the chicken with the mayonnaise and roll it in the chip mixture. Bake for 35-45 minutes or until desired crispness.

*We’ve tried sour cream, sweet chili and original chips so far. You can also try this using your favorite crackers.

Sweet and Sour Sauce #HJrecipes

It’s hard to find a “new” dish that the whole family loves when it comes to meals and with the little one there’s usually more than one supper made. We decided to make a batch of sweet & sour meatballs for a change and really didn’t think the little guy was going to like them because of the vinegar but low & behold, he loved them! This recipe can also be used for sweet & sour pork, sweet & sour chicken balls , ribs, served over rice or used as a simple dipping sauce. It’s also gluten-free!

What you’ll need:
  • 1/2 cup vinegar
  • 1/2 cup ketchup
  • 1 cup brown sugar
  • 2 tbsp potato starch
  • 2 tbsp soy sauce
  • 1 cup water
Directions:
Mix all ingredients in a pot and bring to a boil on the stove. Reduce heat and allow to simmer. The sauce will seem a bit watery but will thicken as it sets. Add the desired meat and continue simmering until meat is cooked. If you don’t want to add meat, simmer sauce until it reaches a syrupy stage and set aside to thicken.

Slow cooker ribs with homemade BBQ sauce

Ingredients

  • 1 cup Ketchup
  • 1/2 cup Onions
  • 1/3 cup Water
  • 1/4 cup Mustard
  • 1/4 cup Butter
  • 1 tbsp Paprika
  • 1 tsp Brown sugar
  • 1/4 tsp Pepper
  • 2 tbsp Lemon juice
  • 1 tsbp Worchester sauce

Directions

  •  I usually double up on this recipe for the ribs.
  • I put some garlic salt, herbamare and pepper over the ribs as they wait for the BBQ sauce.
  • Mix all the ingredients in 1 bowl and whisk it. It will look clumpy but that’s normal.
  • Typically we like to make these slow-cooker ribs as the meat falls off the bone! For this we simply place the ribs in the slow-cooker,  pour the bbq sauce over them but our slow-cooker is broke so I turned the oven on to 200 degrees Fahrenheit this morning around 9 and let it cook until Supper.
  • Serve over white rice…

Gluten Free Raisin Bread Pudding

Ingredients

 

  • 4 eggs
  • 1 cup brown sugar
  • 2.5 cups milk
  • 3-4 tbsp. butter
  • Pinch of salt (1/4 tsp roughly)
  • 1-2 tsp. vanilla extract (GF)
  • 1 loaf gluten-free cinnamon raisin bread (or your bread of choice)
  • Pinch of nutmeg
  • Pinch of cinnamon
  • Handful of sultana raisins

Directions:

 

  • Cut the bread into four strips then continue to cut into bite size pieces.
  • Place the bread on a cookie sheet in the oven at 200°F to dry it out a bit.
  • While the bread dries mix the eggs, sugar, butter, salt, nutmeg, cinnamon and milk together.
  • Add vanilla & raisins and stir.
  • Place the dried bread in a baking dish and pour the liquid mixture over top allowing it to sit for a few minutes to absorb the flavors.
  • Sprinkle with cinnamon for garnish and bake for 60 minutes at 325°F.
For the topping we used a basic caramel sauce:
  • 1 cup (packed) brown sugar
  • 3-4 tbsp. butter
  • 1 tablespoon. vanilla (more if you like vanilla)
  • 1/2 can of Carnation evaporated milk.
Directions:
  •  Bring all ingredients to a slow boil for about 6-8 minutes or until it reaches the consistency you like.
  • Stir often so it doesn’t burn.
  • Remove from heat and pour over your dry mixture

ENJOY!!! It’s really delicious

Homemade Baked Potatoes

Ingredients

  • Potatoes
  • Chives or Green onions
  • Cheese
  • Butter
  • Salt and pepper
  • Spices (optional)

 

Directions

  • Wash potatoes and pare them (remove little knots)
  • Poke some holes with a fork and Wrap it in tin foil
  • Bake at 350 for roughly 45 mins or until the potato is soft
  • Remove from oven and slice the top of the potato and remove some of it.
  • Mash the potato with some butter, spices, chives and cheese.
  • Fill the potato back up and place it in the oven for an additional 10-15 mins or until the cheese is melted.
  • Top it off with some sour cream and bacon bits (both optional as well)

I love this simple recipes, to me it tastes better than crust pizza AND the best part is the kids can dress theirs up the way they like it! 🙂 ENJOY

Homemade Spaghetti Sauce

Ingredients

  • Hamburger
  • Onions
  • Green peppers
  • Chives
  • Oregano
  • Celery
  • Tomatoes
  • Mushrooms
  • Red peppers
  • Can of tomatoes
  • Can of tomato paste
  • Whatever vegetables you like 🙂

Directions

  • Fry your hamburger until its completely cooked and strain it.
  • Then add your other vegetables and let them cook together for a few minutes
  • Next you are going to add your tomato paste and canned diced tomatoes along with your spices of choice 🙂
  • Let it all simmer together for about 20 minutes and its ready to be served..

It also freezes very well AND you can make it gluten-free very easily!!!

GlutenFree Stuffed Chicken Breasts

Ingredients

 

  • 1 or 2 Chicken Breast (skinless)
  • 1/2 cup or more of SPINACH for each breast.
  • Garlic Clove
  • Homemade stuffing or stove top (optional)
  • Garlic butter

 

Directions

  • Steam the spinach until cooked
  • Pound the chicken breast until its flattened out. We just use our hands but you can use a rolling-pin or anything you have lying around.
  • Rub it with garlic butter and finely chopped garlic
  • Lay your spinach down and top it off with some stuffing if you choose to use it 🙂
  • Then finally, you are going to roll the chicken from one end to the other.  If you have string that you can tie it to hold it together or just lay the open side underneath so the weight from the chicken holds it closed.
  • Cook on 350 until the chicken is cooked!!!

Homemade Garlic Butter

Ingredients

  • 1 container of butter or margarine (or less  if you only want a bit)
  • Dried chives ( optional but delicious and adds some color)
  • Fresh Garlic
  • Garlic salt

 

Directions

Mix desired amount of chives into the butter

  • Mince your garlic cloves really small and also add them to the butter.
  • Lastly, if you love garlic and salt, why not add a little garlic salt? :)Its delicious and I’ll never buy garlic butter again 🙂 It also stores nicely

GlutenFree Chicken Stew

I seriously NEVER measure these things, I just cut up using my judgement and until there’s not much room left in the pot. We love stew and its even better the next day! (or if you have left overs,  it freezes well also)

Ingredients
  • Potatoes
  • Turnip (optional)
  • Carrots
  • Onions
  • Celery
  • Chicken stock (homemade of course)
  • Chicken
  • Mushrooms (optional)
  • Yellow or green beans (optional)
  • Spices
Directions
  • Put the chicken on to boil in a large pot, filled half way with water. Add your spices to the water and let it boil until it’s cooked.
  • In the meantime chop up your vegetables into the size you want.
  • Once the chicken is cooked, remove it from the boiling water and cube it up. *Don’t throw away your water, this will be the base for your stew. It has all the delicious flavors blended into it.
  • Then put all your vegetables and chicken into the pot and let it simmer for an hour or so, (I usually have it on 3-4 for the hour, stirring every now and then.

Gluten Free Molasses Pancakes

Ingredients

  • 2 cups Bobs Red Mill all-purpose flour (slightly more if too runny)
  • 1/8 tsp. xanthan gum
  • 2 tsp baking powder
  • 2 tbsp. sugar (optional)
  • 2 tsp. cinnamon
  • 3/4 tsp. salt
  • 1.5 cups milk
  • 2-3 tbsp. molasses
  • 1 egg
  • 2-3 tbsp. oil

 

Directions

  • Sift & mix dry ingredients
  • In a separate bowl combine liquid/wet ingredients.
  • Wisk wet ingredients into the dry ingredients. * I don’t usually add butter because of the oil in the recipe but you can butter your frying pan if you like, cook over medium-low heat.

Makes 6 large or 12 small pancakes.

Avogel’s “How Do you #Herbamare”? Challenge – Homemade Broth

Since my diagnosis of Celiac Disease there are many foods that I’ve learned to do without and many that I’ve taken to making myself. One of the things I love to make is homemade broth! I can make turkey, chicken, beef, vegetable and I’m sure if I wanted to I could make a seafood broth. It’s a great way to reduce waste as I use scraps from vegetables that normally get thrown out like peels, end and skins. It’s also a great way to get proteins, minerals and fats that help heal our bodies. This is especially true for people with Celiac Disease as our bodies use the collagen to repair our damaged intestinal track!

It’s very simple to make a (bone) broth or any broth for that matter. Simply allow the carcus of poultry or a beef bone to simmer for a few hours. The longer it simmers the better. Add vegetable scraps and spices for taste. Strain, cool and freeze. You now have broth that can be used for all kinds of recipes like soup, stew, gravy and more.

Vegetable broth is done the same way but with vegetables. You can use anything you’d like. I normally use broccoli stems which are also great for homemade cream of broccoli soup. Onion peels & ends, carrot peels, cauliflower stems, celery tops & bottoms and I like to throw in a handful of cherry tomatoes to give it that nice reddish-orange color. Add your favorite spices and simmer for a few hours.
*If you want to use peppers I suggest using the top with seeds not the pepper itself as your broth will be slimy*

I made a vegetable broth today and used Zesty Herbamare from A.Vogel to season/salt it as part of our 30 day blogger challenge and I’m impressed with how good it tastes 🙂

Castello Cheeses #Review …. #Foodies #Cheese

We absolutely love cheese in this house. Cheese fingers, cheese fondue, old cheese, mild cheese, you name it we love it! So it’s kind of given that we’d be extremely excited to have been given the opportunity to review Castello cheese products 🙂

Castello cheese is a brand from Arla Foods and is a premium specialty cheese brand that’s sold all over the globe. They produce many different types of cheese each having their own texture and taste. Some of the delicious types of cheese they make are Danish Blue Cheese, Brie, cream cheeses, feta and other mould cheese.

Unfortunately Blue Cheese isn’t something that the hubby is allowed to eat so we skipped out on this cheese. It seems that this is a huge seller around our area as we found many different varieties in the stores here. We also had a conversation with the Deli worker who informed us that the Feta in oil from Castello was a huge hit as well 🙂

Seeing as the Feta is such a huge seller we weren’t able to get our hands on any and decided to go with their delicious Brie which you may remember us mentioning in another Review? We also decided to try their Camembert cheese which is a soft, white cheese with a mild taste and a soft, almost spreadable texture. The taste of this cheese is similar to Brie and pairs great with breads, vegetables, wines, syrups and nuts.

We aren’t very crafty when it comes to cheese recipes but we do occasionally like to have fondue and absolutely love baked cheese wheels as different ways of enjoy this delicious dairy product.

Seeing as we aren’t very creative with cheese, we decided to take the simplest route and baked our wheel of Camembert 🙂

  • First we thinly sliced off the top.
  • Next we shoved diced onions and garlic into the cheese. Topped w/ fresh chopped parsley. If you want to get even more creative you can also try sprinkling your favorite spices. Cracked peppercorn is a favorite of ours.
  • Then we placed the top back on, kind of like a cover, and baked it at 350° F for 15 to 20 minutes.

Be very careful as the cheese is going to be runny and very hot! Simply dip your favorite dipping snack and enjoy 🙂

#Review for some of Newfoundland’s Finest Chocolate!!

I am not going to lie, I absolutely love sweets  and I was beyond happy to be able to Review a very delicious assortment of hand-made chocolates from a company called Newfoundland Chocolate. You can see the art work, quality and time invested in this very box 🙂 Trust me that Newfoundland Chocolates will Not let you down ! (let’s put it this way, I am not a big fan of dark chocolate but I ate the ones in this box and they were….wait for it…. DELICIOUS!!!)

This box is called the  Jigs n Reels Series: Assortment collection of chocolate. I was very impressed!

  • Hazlenut Bar – This one contains a creamy milk chocolate with chopped hazlenuts = yummy. You can’t go wrong when you put nuts in chocolate. It also contains 34% cocoa.
  • Milk-Orange Bar – This is simply a taste thing!!! I absolutely LOVE orange flavoured chocolate, my family thinks I am nuts but I say it’s my tastebuds ;). Very good chocolate!!! This one contains 31% cocoa
  • Pure White Bar – Who else loves White Chocolate????. I am VERY picky about which kind I like and this totally makes the cut 😀 I am once again very impressed! Contains 26% cocoa
  • Wildberry Bar – This one has a rich milk chocolate with an array of whole Newfoundland Wildberries. I love that they even use berries, Yummy. It Contains 42% cocoa. I guess this is the most popular bar of the bunch!!! And I can see why.. It’s sweet and delicious.. Can we say that it’s healthy because of the berries? 😛

Taste Of Nature – Healthy Organic Bars review

We’re a pretty active family who love adventuring, weather permitting of course. It’s so much easier to be out and about now that the little one doesn’t need a trunk load of stuff to be comfortable and prepared. One of the great things about that is being able to have what I like to call “grab & go” snacks, basically anything you can conveniently take with you as a snack. Obviously the healthier ones being the top choice! Which brings me to a company by the name of Taste Of Nature, who manufacture a very deliciously healthy line of snack bars that are *Certified Gluten free, Non-GMO Project Certified, 100% Certified Organic and Vegan Certified!

These bars are made of delicious fruits and nuts and use fruit nectar to sweeten them as well as to work as a binding agent. These tasty bars come in a few different flavors with different ingredients including Quebec Cranberry Carnival, Brazilian Nut Fiesty and newly introduced Louisiana Pecan Parade. Just the names of these bars make a person hungry, lol. The hunks of fruit in them are absolutely delicious, by hunks I mean whole pieces such as whole cherries and so on. This combined with the nuts and other healthy ingredients like sesame seeds, apples, cranberries and more are what make them a truly healthy treat 🙂 Whether you’re a health enthusiast, active and on the go or just looking to make a healthier snack choice, these bars will amaze your taste buds 🙂

This is definitely a product that I recommend. We love that it’s so healthy and Organic also!

Rainbow Cookies Recipe

Ingredients

  • 1/4 cup Granulated Sugar
  • 1/2 cup Packed Brown Sugar
  • 1 1/2 cups All purpose flour
  • 3/4 tsp Baking Soda
  • 1/4 tsp. Baking Powder
  • 1/2 cup M&Ms
  • 1/2 Quick-cooking rolled oats(not instant)
  • 1/2 cup Peanut Butter chips
  • 1/2 cup Crisp rice cereal (such as rice crispies)

 

Directions

  • Combine all these ingredients together (make sure to mix your baking soda and powder with your flour)
  • Beat together the following until smooth. Mixture may look curdled.
  • 1/2 cup of Softened margarine
  • 2 large eggs
  • 1/2 tsp vanilla
  • Add your dry ingredients and mix well.
  • Drop onto an Ungreased cookie sheet
  • Bake at 350 degree for about 10 mins.

 

Makes about 30 small cookies… ENJOY 🙂

Tulip Spice Grinder Review

The third product I got to review is called the Tulip Grinder. It has a piece in the top that allows you to change the coarseness of the spice you are grinding. You turn it upside down to grind then it conveniently stores the spices in the jar for the next time you need them. I love how nice, small and handy it is, I like to leave mine on the counter.

Now I’ve been talking about it all last year, we want to build another garden as well as our own herbs. We make a lot of our own foods and spices for us are a must. The tulip grinder will come in handy for sure then.

They have a few different choice of colours making it something that will go with any kitchen. Some folks even get 2 of them to use as salt & pepper shakers which is the cutest thing I’ve ever seen. You can find this Tulip Grinder HERE for $24.

The wholesome, all natural ingredients such as rye, salt, yeast & water used in Wasa Crispbread recipes make them naturally full of fiber (most contain at least 2 grams of fiber per serving). They are also low in fat and contain no trans fats and a lot of them do not contain any sugars, which is great for sugar restriction diets. The one thing about Wasa crispbreads that I would change, would be to make them in a resealable bag for more convenience.

Dempsters Gluten Zero Bread Review

  I’m sure I’ve said it before but when it comes to the array of gluten free product choices I have they’re slim, I’m talking 2 grocery stores with an isle that has vegan and organic products as well, so you can just imagine my options! It’s nice to have multiple choices when it comes to food and thankfully the big name companies that I loved before my diagnosis are making that possible by introducing gluten free products .

 Dempsters-Gluten-Zero-Bread-Review 

  Canada Bread Co. Ltd. which is 90% owned by Maple Leaf Foods Inc. Is one of those companies and has recently launched a new line of gluten free bread known as “Dempsters Gluten Zero” bread that has hit the shelves of major retailers this November and can be found in the bakery isle, yup the bakery isle! You’re probably thinking it should be frozen as other gluten free breads right? Wrong! Gluten Zero breads are vacuum sealed at the point of baking, locking in moisture and freshness allowing the bread to be stored unopened for 21 days on the shelf as well as for 5 days on the counter after opening. I recommend keeping it in the fridge though, as I found mine to be drying out by the second day on the counter.

  They currently have two types of bread available, white and 100% whole grain, which are produced in a dedicated gluten free facility and have been certified as safe, 100% gluten free products by the Canadian Celiac Association! To be honest I wasn’t too sure about the whole grains and my Celiac but gave it a try nonetheless and am very happy to say I had NO pain 🙂 Gluten Zero breads are a heavy, more filling gluten free bread and I was extremely impressed by this quality as I don’t find gluten free food very filling! Another great quality that these breads have is their texture, soft yet spongy like a loaf I would have made, ok the mother in law makes 😉

  I really like that Dempsters has made gluten free living easier (option wise) with their new line of breads and that they’ve made them great for us Diabetics as well with the little amount of sugars and fats and best of all 0 trans fats 🙂 Dempsters did an amazing job with their new line of gluten free bread as it’s great for sandwiches, french toast, grilled cheese and just plain old buttered bread and is most definitely a bread I’ll be filling my freezer with! I’m keeping my fingers crossed that their “everything bagel” might be their next yummy gluten free option, yum 🙂
