Gluten Free Tuna Casserole

Imagine being on three food restrictive diets. Celiac, Diabetes and Renal diets doesn’t leave a person with too many options to choose from. My (J) diet mostly consists of rice and potatoes which have become a huge bore. I don’t eat tuna often but occasionally I do get a craving for it and if it’s not in a salad it’s in a gluten free tuna casserole. This allows me to eat pasta for a change since the only pasta I’ve been eating lately has involved lasagna.

Gluten-Free-Tuna-Casserole

What you’ll need:

  • 2 cups uncooked gluten-free macaroni

  • 1 cup of your basic white sauce

  • Chicken bouillon for flavor

  • 1 can of tuna (drained)

  • 1-2 cups of cheese (depends on how cheesy you like it)

  • Gluten-free bread crumbs or cracker crumbs for crunch

Directions:

Cook macaroni. Drain well & set aside. Mix the chicken bouillon into the white sauce. Pour over macaroni. Add tuna. Mix well. Place in a casserole dish and cover with cheese. Sprinkle crumbs over the cheese for an added crunch and bake at 350 F for approximately 20 minutes. Broil on high for approximately 10 minutes or until the cheese starts to brown.
