These are delicious, simple, organic, non-gmo, gluten-free and guilt-free Crunchy PB & Jam Bars using Crofters Organic Jams. The recipe is theirs and the only thing I did differently was mix my strawberry and blueberry jam together to get the spread in the middle 🙂

Crunchy PB&J Bars

Ingredients:

Base and Topping:
1 1/2 cup organic quick-cooking rolled oats
1/4 cup organic whole wheat or all-purpose flour
1 tsp baking powder
1/4 tsp sea salt
2/3 cup crunchy peanut butter
6-8 tbsp maple syrup (to desired sweetness)
1 tsp vanilla extract
1 jar Crofters Organic Four Fruit Premium Spread for fruit filling

Directions:

Instructions:
Preheat Oven to 350F, and grease a 8″ square pan.
In large bowl, mix together oats, flour, baking powder and salt.
In a small bowl, mix together crunchy peanut butter, maple syrup and vanilla extract.
Add peanut butter mixture to dry ingredients, and blend until just combined and crumbly. Set aside 1/2 cup packed dough for crumbling on top. Press the rest of the dough evenly into the pan.
Spread Crofter’s Organic Four Fruit Premium Spread over the peanut butter oat base.
Crumble reserved dough over the fruit spread.
Bake at 350F for 25 minutes, or until topping is golden brown.
