We’re always concocting something in the kitchen, as “fresh” is even more of an essential part of lives now as it’s ever been! Having food restricted diets in our household eating healthier has become a natural instinct and making things from scratch has come along with it. One of our favorite things to do is to slap ingredients together to create a unique but tasty recipe and home-made breadings/batters are perfect for exactly that!
What you’ll need
1/4 cup ground Gluten-free snack crackers (I used Breton)
1/3 cup ground flaxseed
1-2 tsp. spices (I mixed garlic powder, onion powder & parsley flakes as these are safe for a renal diet but you can use any mixture of spices at all)
1 tbsp. parmesan cheese (powder)
1 egg (beaten)
2-3 chicken breasts (depends on size)
In a blender grind the flaxseed, crackers, parmesan cheese and spices until fine like bread crumbs. Dip raw chicken pieces into the beaten egg and then roll in the grinded mixture until evenly coated. If you like you can also add thinly sliced green onions to the breading for extra flavor. Place chicken on a baking sheet and bake for 30-35 minutes in a 350° Fahrenheit oven, do not turn over. Makes 4-6 portion sized servings.
