Gluten Free Raisin Bread Pudding

Ingredients

 

  • 4 eggs
  • 1 cup brown sugar
  • 2.5 cups milk
  • 3-4 tbsp. butter
  • Pinch of salt (1/4 tsp roughly)
  • 1-2 tsp. vanilla extract (GF)
  • 1 loaf gluten-free cinnamon raisin bread (or your bread of choice)
  • Pinch of nutmeg
  • Pinch of cinnamon
  • Handful of sultana raisins

Directions:

 

  • Cut the bread into four strips then continue to cut into bite size pieces.
  • Place the bread on a cookie sheet in the oven at 200°F to dry it out a bit.
  • While the bread dries mix the eggs, sugar, butter, salt, nutmeg, cinnamon and milk together.
  • Add vanilla & raisins and stir.
  • Place the dried bread in a baking dish and pour the liquid mixture over top allowing it to sit for a few minutes to absorb the flavors.
  • Sprinkle with cinnamon for garnish and bake for 60 minutes at 325°F.
For the topping we used a basic caramel sauce:
  • 1 cup (packed) brown sugar
  • 3-4 tbsp. butter
  • 1 tablespoon. vanilla (more if you like vanilla)
  • 1/2 can of Carnation evaporated milk.
Directions:
  •  Bring all ingredients to a slow boil for about 6-8 minutes or until it reaches the consistency you like.
  • Stir often so it doesn’t burn.
  • Remove from heat and pour over your dry mixture

ENJOY!!! It’s really delicious

I made this on Saturday, but I used cinnamon raisin bagels instead because they are cheaper than the bread, and I think everyone needs to make this, omg is it so good, my daughter doesn’t like raisins or butterscoth chips, but she had a big bowl of it and loved it, thanks for sharing such a yummy dish!!!
