Diagnosed With Dialysis

 

Being in and out of hospitals on a monthly basis over the past few years I assumed that my most recent trip the ER was going to go like it usually did, a few days of recuperating and I’d be back home. Unfortunately for me this wasn’t the case! Within a few hours of being admitted the Doctor came in with some pretty grim news. I was being transferred to another hospital where I would be meeting with the Nepherologist ( kidney specialist)  to decide whether or not I would be diagnosed with dialysis treatment for my kidneys? I’ve been preparing myself for this moment as my kidneys have only been functioning at 39% for a few years now but despite my preparation, it’s never easy to accept something like this! I was depressed, frustrated and feeling very anxious about my situation and what was to come.
Once I met the Nephrologist (kidney specialist) I was told that I would be staying for a bit. Passing from hospital to hospital since the first of August was taking a toll on me as it was and having to be 1 1/2 hours away from home was going to be even harder as I’ve never been more than a 20 minute drive from home. A little bit easier for my wife and son to come visit every once in a while. An hour and half would be a lot of driving back and forth not to mention quite costly when it came to gas so the news of staying wasn’t exactly a cherry on top! After a few days of tests I was transferred downstairs to intensive care where they would be inserting a catheter into my chest for dialysis treatment, my kidneys weren’t doing enough anymore.

Obviously this made me extremely nervous but thankfully they administered narcotics to calm me down because I would have totally panicked without them! Procedure being done, dialysis started. To be completely honest, it’s not what I expected and I’m grateful so far that my treatments haven’t been too bad. I occasionally get numb fingers which I blame on the constant blood pressure monitoring and occasionally I feel kind of spacey but that’s it. Some patients get sick, pass out and just feel bad in general.

My diet is now a major factor in my life. Everything I eat has to be low-sodium, low-potassium, NO phosphorus which means even more label reading! On top of that I’m on a celiac and diabetic diet which makes my job even more difficult now as certain gluten-free products such as baking ingredients are a no-no for me. As for the rest of what I can’t eat, it consists of some of my favourite foods. Nuts, milk, cheese, turnips, tomatoes, bananas, ice cream, mushrooms and sooo much more! I’ve gotten used the unsalted part as salt was something that I avoided before this and the vegetable and fruit part of it have been pretty easy as I love them both. All-in-all it’s not as bad as I figured it would be. We’ll have to make time for the 6 hours of travel every second day for dialysis treatments which to me is the worst part of it besides the weight I’m losing with the nutrients being taken off during treatment.

Slow cooker ribs with homemade BBQ sauce

Ingredients

  • 1 cup Ketchup
  • 1/2 cup Onions
  • 1/3 cup Water
  • 1/4 cup Mustard
  • 1/4 cup Butter
  • 1 tbsp Paprika
  • 1 tsp Brown sugar
  • 1/4 tsp Pepper
  • 2 tbsp Lemon juice
  • 1 tsbp Worchester sauce

Directions

  •  I usually double up on this recipe for the ribs.
  • I put some garlic salt, herbamare and pepper over the ribs as they wait for the BBQ sauce.
  • Mix all the ingredients in 1 bowl and whisk it. It will look clumpy but that’s normal.
  • Typically we like to make these slow-cooker ribs as the meat falls off the bone! For this we simply place the ribs in the slow-cooker,  pour the bbq sauce over them but our slow-cooker is broke so I turned the oven on to 200 degrees Fahrenheit this morning around 9 and let it cook until Supper.
  • Serve over white rice…

Homemade Brown Sugar Fudge

Ingredients

 

  • 4 cups of packed brown sugar
  • 1 can of evaporated milk
  • 2 tbsp butter
  • 1 tsp vanilla Directions
  • Combine brown sugar and evaporated milk and cook over medium- high heat until soft ball stage (235 degrees).
  • Remove from heat and add butter and vanilla.
  • Cream until smooth
  • Pour into buttered pan. Let partially cool then cut them into small square pieces of fudge

If you like your fudge less creamy tasting, let it sit over night so it can dry out a bit. The hubby does this all the time as he likes his home-made brown sugar fudge to crumble and melt.

Now I am not one for bar soap and I’ll say that right from the start. I find it leaves your skin and the water filmy feeling, also I find it tends to dry out our skin. Until Now that it :). DNA Serum from Skin Pro review

Here is another item from SkinPro called DNA Serum. It’s a newly released, anti-wrinkle gel derived from Viper Venom. This also comes in a handy syringe to disperse just the right amount of product. It’s definitely my “look younger without the needles” cosmetic of choice.

Obviously it’s not pure venom and is totally harmless if used properly, but i must say it does work the same way. Just as venom would, it relaxes the muscles around your eyes, leaving your fine lines and wrinkles less visible.

Gluten Free Raisin Bread Pudding

Ingredients

 

  • 4 eggs
  • 1 cup brown sugar
  • 2.5 cups milk
  • 3-4 tbsp. butter
  • Pinch of salt (1/4 tsp roughly)
  • 1-2 tsp. vanilla extract (GF)
  • 1 loaf gluten-free cinnamon raisin bread (or your bread of choice)
  • Pinch of nutmeg
  • Pinch of cinnamon
  • Handful of sultana raisins

Directions:

 

  • Cut the bread into four strips then continue to cut into bite size pieces.
  • Place the bread on a cookie sheet in the oven at 200°F to dry it out a bit.
  • While the bread dries mix the eggs, sugar, butter, salt, nutmeg, cinnamon and milk together.
  • Add vanilla & raisins and stir.
  • Place the dried bread in a baking dish and pour the liquid mixture over top allowing it to sit for a few minutes to absorb the flavors.
  • Sprinkle with cinnamon for garnish and bake for 60 minutes at 325°F.
For the topping we used a basic caramel sauce:
  • 1 cup (packed) brown sugar
  • 3-4 tbsp. butter
  • 1 tablespoon. vanilla (more if you like vanilla)
  • 1/2 can of Carnation evaporated milk.
Directions:
  •  Bring all ingredients to a slow boil for about 6-8 minutes or until it reaches the consistency you like.
  • Stir often so it doesn’t burn.
  • Remove from heat and pour over your dry mixture

ENJOY!!! It’s really delicious

Homemade Baked Potatoes

Ingredients

  • Potatoes
  • Chives or Green onions
  • Cheese
  • Butter
  • Salt and pepper
  • Spices (optional)

 

Directions

  • Wash potatoes and pare them (remove little knots)
  • Poke some holes with a fork and Wrap it in tin foil
  • Bake at 350 for roughly 45 mins or until the potato is soft
  • Remove from oven and slice the top of the potato and remove some of it.
  • Mash the potato with some butter, spices, chives and cheese.
  • Fill the potato back up and place it in the oven for an additional 10-15 mins or until the cheese is melted.
  • Top it off with some sour cream and bacon bits (both optional as well)

Elite Serum Instant

We received an amazing product named Elite Serum Instant from SkinPro. This is an anti-wrinkle and fine line reducer that I can say actually works! Just as many people probably are, I was skeptical about these types of products due to the many products that I have tried before this one that I basically wasted my money on and got absolutely no results from. We just won’t talk about that, lol!

The reason it’s called Elite Serum “Instant” is because you can actually feel it start to work instantly. Within moments I can feel my skin getting tighter and it’s strange to say but it makes my eye’s feel more awake. Something we could all use in the morning.

The directions are simple to understand; apply to clean skin with your fingers tips and spread in an upward and outward motion. Stroke over fine lines and wrinkles. Allow to dry for 5 minutes. Do not rub. Use as needed. Pretty easy don’t you think?

I usually use it in the morning after I’ve cleansed my face and before I go to bed at night. It leaves me feeling refreshed and rejuvenated. I love how it has a nice light scent. Nothing overpowering which is great for sensitive skin.

I have a few lines starting around my eye’s and forehead and have been using this product for 2 weeks now and honestly don’t notice the fine lines as much as I used to. (Stay tuned for some before & after pics)

My only issue, if you can call it that, is the amount of information on the product/packaging as it doesn’t state that it’s an anti-wrinkle serum until you read the directions. This would be very helpful as some people may not know what the product is by glancing at it.

Each Elite Serum Istant comes in a nice syringe that disperses just the right amount of the product that you need so that you have absolutely no waste. I would recommend that you put it on your fingertip first as it does sometimes squirt out.

* I believe that men can and do use these products as well. If it works as it’s supposed to its fine by me and this product has proven just that! We think it would make the perfect gift and I will definitely be picking some up for my mom’s birthday but don’t tell her.

Homemade Spaghetti Sauce

Ingredients

  • Hamburger
  • Onions
  • Green peppers
  • Chives
  • Oregano
  • Celery
  • Tomatoes
  • Mushrooms
  • Red peppers
  • Can of tomatoes
  • Can of tomato paste
  • Whatever vegetables you like 🙂

Directions

  • Fry your hamburger until its completely cooked and strain it.
  • Then add your other vegetables and let them cook together for a few minutes
  • Next you are going to add your tomato paste and canned diced tomatoes along with your spices of choice 🙂
  • Let it all simmer together for about 20 minutes and its ready to be served..

It also freezes very well AND you can make it gluten-free very easily!!!

GlutenFree Stuffed Chicken Breasts

Ingredients

 

  • 1 or 2 Chicken Breast (skinless)
  • 1/2 cup or more of SPINACH for each breast.
  • Garlic Clove
  • Homemade stuffing or stove top (optional)
  • Garlic butter

 

Directions

  • Steam the spinach until cooked
  • Pound the chicken breast until its flattened out. We just use our hands but you can use a rolling-pin or anything you have lying around.
  • Rub it with garlic butter and finely chopped garlic
  • Lay your spinach down and top it off with some stuffing if you choose to use it 🙂
  • Then finally, you are going to roll the chicken from one end to the other.  If you have string that you can tie it to hold it together or just lay the open side underneath so the weight from the chicken holds it closed.
  • Cook on 350 until the chicken is cooked!!!

Homemade Garlic Butter

Ingredients

  • 1 container of butter or margarine (or less  if you only want a bit)
  • Dried chives ( optional but delicious and adds some color)
  • Fresh Garlic
  • Garlic salt

 

Directions

Mix desired amount of chives into the butter

  • Mince your garlic cloves really small and also add them to the butter.
  • Lastly, if you love garlic and salt, why not add a little garlic salt? :)Its delicious and I’ll never buy garlic butter again 🙂 It also stores nicely

GlutenFree Chicken Stew

I seriously NEVER measure these things, I just cut up using my judgement and until there’s not much room left in the pot. We love stew and its even better the next day! (or if you have left overs,  it freezes well also)

Ingredients
  • Potatoes
  • Turnip (optional)
  • Carrots
  • Onions
  • Celery
  • Chicken stock (homemade of course)
  • Chicken
  • Mushrooms (optional)
  • Yellow or green beans (optional)
  • Spices
Directions
  • Put the chicken on to boil in a large pot, filled half way with water. Add your spices to the water and let it boil until it’s cooked.
  • In the meantime chop up your vegetables into the size you want.
  • Once the chicken is cooked, remove it from the boiling water and cube it up. *Don’t throw away your water, this will be the base for your stew. It has all the delicious flavors blended into it.
  • Then put all your vegetables and chicken into the pot and let it simmer for an hour or so, (I usually have it on 3-4 for the hour, stirring every now and then.
