Ingredients
- 2 cups Bobs Red Mill all-purpose flour (slightly more if too runny)
- 1/8 tsp. xanthan gum
- 2 tsp baking powder
- 2 tbsp. sugar (optional)
- 2 tsp. cinnamon
- 3/4 tsp. salt
- 1.5 cups milk
- 2-3 tbsp. molasses
- 1 egg
- 2-3 tbsp. oil
Directions
- Sift & mix dry ingredients
- In a separate bowl combine liquid/wet ingredients.
- Wisk wet ingredients into the dry ingredients. * I don’t usually add butter because of the oil in the recipe but you can butter your frying pan if you like, cook over medium-low heat.
Makes 6 large or 12 small pancakes.

I have no idea what the gum is or where I would buy it, I have never added anything like that to my pancakes – what is it for?
The gum is a binding agent that isn’t present in gluten-free flour. Flour itself has a natural glue (Gluten) that binds food together. This is what makes people with Celiac sick as our bodies can’t break it down. You need to add guar gum or xanthan gum to all gluten-free baking unless you use an all purpose flour that has it added already as most pre-mixed gluten-free flour does. I buy my gum at the grocery store down the health food section. ~J~
