Gluten Free Cauliflower Crust

Ingredients

  • 2.5 cups grated cauliflower
  • 1 egg slightly beaten
  • 1 1/4 cups shredded/grated cheese

 

Directions

  • Line a rimmed baking sheet/pan with parchment paper &  the oven to 425° F.
  • Grate cauliflower & microwave for 7-8 minutes or until it’s soft. Set aside to cool!
  • Mix the egg with the grated cheese. Remove any excess juices from the cauliflower using a cheese cloth or paper towels. Mix the egg & cheese into the cauliflower and pat into the lined baking sheet/pan.
  • Bake for 10-15 minutes or until golden. For a crispier crust bake for 20-25 minutes. Add your favourite pizza ingredients bake for an extra 10 minutes and you have the best tasting healthy pizza that anyone will ever eat!

* I personally like to add spices such as garlic powder, celery salt, pepper,  green onions and dried chive rings to give a bit more flavour to the crust. These can also be frozen for later use.

Make Brown Sugar with these 2 simple ingredients!

Ingredients

To make 1 Cup Light Brown Sugar:

  • Combine 1 cup granulated sugar with 1 1/2 tablespoons molasses
To make 1 Cup Dark Brown Sugar:
  • Combine 1 cup granulated sugar with 1/4 cup molasses

 

Directions

  • Be sure to mix it well as it will become fluffier the more it’s blended.

Gluten Free Molasses Pancakes

Ingredients

  • 2 cups Bobs Red Mill all-purpose flour (slightly more if too runny)
  • 1/8 tsp. xanthan gum
  • 2 tsp baking powder
  • 2 tbsp. sugar (optional)
  • 2 tsp. cinnamon
  • 3/4 tsp. salt
  • 1.5 cups milk
  • 2-3 tbsp. molasses
  • 1 egg
  • 2-3 tbsp. oil

 

Directions

  • Sift & mix dry ingredients
  • In a separate bowl combine liquid/wet ingredients.
  • Wisk wet ingredients into the dry ingredients. * I don’t usually add butter because of the oil in the recipe but you can butter your frying pan if you like, cook over medium-low heat.

Makes 6 large or 12 small pancakes.

Gluten-Free Coconut Cookies

Ingredients

  • 1 1/2 cups of Elpeto Gluten-Free Flour Mix (3/4 =1 cup)
  • 1 cup of shredded sweetened coconut
  • 1/2 tsp. salt
  • 1 Tbsp baking soda
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup coconut oil
  • Vanilla (optional)

 

Directions

  • Preheat oven to 350°F.
  • In a large bowl mix the coconut, flour, salt & baking soda, set aside.
  • In a separate bowl cream together the coconut oil, sugar & eggs, I used a handheld mixer as the oil was a bit harder to cream without lumps.
  • Pour the wet ingredients into the dry and mix.
  • Roll dough into quarter sized balls and place on a greased cookie sheet.
  • Bake for 8-10 minutes or until the edges are light brown.

Makes 38 cookies.

Complications Of Diabetes

I recently wrote a post for Parent Tested Parent Approved (PTPA) regarding the complications I’m currently suffering being a Type 1 Diabetic for more than 3/4 of my life named Diabetic Problems which you can find below. Feel free to share your stories of Diabetes as well.

 

“It’s been 27 years since I was diagnosed with Type 1 Diabetes and it’s been a struggle controlling my blood sugars since then. Imagine being a kid that wasn’t allowed to have any kind of sweets. It wasn’t easy even though I was able to eat the diabetic stuff, it just wasn’t the same. I was always told that there would be consequences for cheating on my diet and uncontrolled sugars and damage to my body were those consequences. I’m thankful to have met many other diabetics who have had amputations and have lost vision, just some of the unfortunate results of this life-long disease. These people have helped me realize what I was knowingly ignoring; my condition needs constant monitoring and as much as that coconut cream pie is making my mouth water, my disease will take the toll!

I’ve learned the hard way! I now suffer from acute renal failure, gastroparesis and mow eye problems. Roughly 6 years ago, I was getting ready for bed when I suddenly felt nauseous. I got up to go to the bathroom and the next thing I know I’m on the bathroom floor. I had a massive headache and noticed black lines in my vision as well as it being blurry. Thankfully my wife was home to come see what had happened and was able to rush me to the ER. Turns out I had an aneurysm in my eye that burst and when this happened I blacked out and hit my head on the corner of a shelf as I fell. Hence the major headache! This is what I thought left me with eye floaters but it’s actually something that Diabetics suffer from know as diabetic retinopathy. These floaters I see can look like:

  • Black or grey dots

  • Squiggly lines

  • Threadlike strands which can be semi-transparent

  • Ring shaped

  • Cobwebs

Once a person develops floaters they usually don’t go away!

Every year I have to go for lasik surgery to stop the hemorrhaging in my eyes due to the Diabetes which is apparently something that happens to people who have had diabetes for 10 years or more. The thing that’s scary is that people with this disease will eventually lose their sight. I’m definitely fortunate and thankful to be living in a country where treatment is covered and that I at least have a hope of keeping my eyesight.

This week was one of surgery pics and in August comes the 3 appointments for surgery. Even though I’ve had it done before I can’t help but feel anxiety kicking in as the days countdown. The consequences of a disease are never easy to accept but doing what it takes to keep it at bay is a must! I wake up ever morning thankful for being granted one more day of being able to see my son grow, my wife’s loving face and this beautiful world we live in. Don’t ever take your health for granted!

Kinderglo Night Light Review

This is a portable, fun and safe rechargeable night-light. We received the dragon and our son just loves him. I find it’s perfectly bright and is great for any child’s room. The best part about the Kinderglo is that you don’t need to plug it in.
My son typically sleeps with a night-light on and this product is saving us money on our electricity bill because we no longer have to have this old night-light plugged in all night.

Riley loves having the choice of which color his light will be or simply leaving them interchange is fun also. There is a 30 minute timer that will automatically shut itself off or you can have it on all night. I would recommend buying one of these as your next baby shower gift. The new parents to be will be so happy you did 🙂

All Kinderglo lights are non-toxic and are made with safety approved material so there’s no need to worry about your child putting this in his/her mouth. Another great thing about this product is  unlike other night lights that get very hot, the Kinderglo stays cool to the touch.

Tenderflake To The Picnic! #TenderflakePie

We love to bake and pies are a the best! You can literally put anything into a pie although it may already have a name like Quiche for example. You can add anything at all to a quiche which is especially important when it comes to the fussy pants of the family. And you can always tell the kids that it’s a breakfast pie, lol! The best part about this dish is that you can use a normal pie crust or you can use mini tarts which are great to take on picnics.

 

If you’re in need of a quick picnic snack or main course for that matter, Tenderflake frozen pie crusts are definitely something worth putting on the grocery list and you can see why below 🙂

                    Mini Quiche

The moment they came out of the oven. They turned out delicious!

 Mini Quiche Tarts;

Ingredients:

 

*First you are going to take your shells and place them apart on a baking sheet

  • 1 – Tenderflake Mini Tart 2” Shells, 18 Pack
  • 2 Eggs
  • 1/4 cup of milk
  • 1 carrot (cut into small cubes)
  • Some Chives
  • Garlic Salt
  • Red Chili Peppers

(You can add whatever you like to this, its one of those do-it-yourself recipes with things you like)

 

  • Put all the above ingredients into a bowl and scrambled it all together.
  • Pour some in each mini tart shell.
  • Bake at 350* for about 15 minutes or until your egg looks cooked.

The second dessert I decided to make was yummy pumpkin pie tarts. Who doesn’t love these??? 🙂 Typically I make this from scratch but it was short notice and I didn’t have a pumpkin on hand so I used the canned stuff :/ but it’s okay because I added my own little touch and they were another hit.

Pumpkin Pie Tarts

Ingredients:

 

  • 1 – Regular Tart 3” Shells, 12 Pack
  • 1 Can of Pumpkin Pie filling
  • 1 egg
  • 1/4 evaporated milk
  • And I added some raisins to mine

How to Bake:

  • I laid my tart shells out and put about 3-4 raisins at the bottom of the tart
  • Added my pumpkin pie filling to each tart
  • Finished some of the tarts off with 3 raisins on the top

Bake at 425 for 15 minutes, then reduce the heat to 375 and bake until your toothpick comes out clean (roughly 30 minutes)

*Let cool and enjoy.. (Some people add whipped cream on the top but I didn’t think it would last long bringing them to the picnic so I omit it this time and they were still very tasty.

Tarts are a favorite here. From butter tarts to lemon tarts, they will be eaten for sure.  A picnic wouldn’t be a picnic without pie so we also made an apple pie for those that aren’t fans of pumpkin.

Apple Pie

  • 6-8 medium-sized apples. Peeled & Cored.
  • 3/4 cup brown sugar
  • 3-4 tbsp. butter (melted)
  • 3/4-1 tsp. cinnamon
  • 1 tsp. lemon juice
  • 1 pkg. Tenderflake Deep Dish Pie Shell (2 shells)
  • Egg wash (Optional)

 

Peel and core the apples then mix them with the lemon juice to prevent browning as well as to give some moisture to the sugar mixture in the next step. Mix the brown sugar, butter & cinnamon together. If you’d like you can add a bit of flour and water as well to make a pastier pie. Add the sugar mixture to the apples and pour into one of the deep dish pies. Place the second one on top and go around the edges with a fork. Brush with the egg wash and sprinkle with sugar if you’d like. Bake for 35-45 minutes on 375. Allow to cool and bring it along for a delicious picnic dessert.

 

And Voila, you can have delicious snacks, appetizers or main courses in just moments. This wouldn’t have been easy without Tenderflake products of course. Conveniently pre-made crusts and shells are a huge time saver as well as an ingredient saver and they cook perfectly every time. Tenderflake’s products can be found in the freezer section of major grocery stores and some smaller stores as well which is great as they’re not hard to find.

I’m not going to lie, this is not like your typical bracelet. These are wrap arounds and at first glance I was a little unsure on how to put it on. After playing around with it for a little while I finally figured it out, lol.

Gluten Recuperation

It’s been over a year since my diagnosis of Celiac Disease and it’s been fairly easy sticking to a gluten-free diet thanks to the many gluten-free companies and products. I do occasionally get “glutened” but it’s nothing that I don’t notice right away. The other day I had eaten something that my body didn’t respond to right away. Normally I get instant pains when a piece of food containing gluten is put in my mouth. Unfortunately this wasn’t the case this time and I continued eating. All was well throughout the evening so I went to bed. I awoke around 4 am with the most excruciating pains and new that it had to be from something that I ate! Once I started feeling better I thought that listing a few of the things that helped/help me get through the pain and discomfort might be helpful for others as well. so here they are:

  • Sleep: This helps as you’re not awake to feel the discomfort and it allows your body to recuperate faster.
  • Caffeine: I don’t know if this will work for others but I find that when my guts are sore and uncomfortable drinking coffee or tea slowly helps get my stomach moving. This could be because caffeine is a stimulant.
  • Hot baths: This helps alleviate some of the pain and discomfort as well any nausea.
  • Walking: I personally find that the movement helps with that icky feeling as well as getting my guts to function.
  • Massage: I find that massaging my lower back close to my spine helps alleviate pain and discomfort as well as helps getting my intestines to function. I can actually feel the lodged food moving. I often get the wife to use a rounded object like a toy hammer or the nose of a play horse.
  • Dairy: Avoid Dairy as much as possible although certain products actually make me feel better like milk.
  • Broth: Eat home-made broth or make a soup with rice & gluten-free noodles. This avoids any heavy products like meat or veggies that are going to be harder to digest.
  • Water: Drink lots of it to flush out your system and stay hydrated.
  • If all else fails got to the ER where they can administer medications that will help get you back to normal again.  Something I’ve done numerous times!

The heat of Summer is finally here and keeping cool is essential! We usually jump in the pool or hit the beach but also like ice cold treats to cool off as well. We often make these treats by freezing yogurt or fruit juice as we want the little one eating healthy treats. Ice cream is something we eat as well but it contains sugar so we don’t eat it often.

Yonanas by Dole allows you to make ice cream out of frozen fruit in a matter of seconds! After the bananas/fruit has been frozen that is.

Steps:

  1. Peel over ripe bananas or fruit & freeze for 24 hours.
  2. Plug in & turn on the Yonanas machine.
  3. Insert a banana or a few small pieces of fruit. You can also add crushed cookies and chocolate pieces. Push down with plunger.
  4. If you use more than 1 ingredient mix before serving.

We love that we can make all kinds of different flavors as well as different desserts that are 100% healthy. Some of the ingredients you can use are:

What The Hack With Udis Gluten Free Foods

We love Udis Gluten Free Foods and have since day one. Recently we were given the opportunity toparticipate in their What The Hack food hacks and it took a lot of thinking of ways to do such a task! We aren’t creative but gave it our best and have asked our Facebook fans to help with ideas and hope you’ll enjoy our hacks.This one was a simple garden salad with crushed Ancient Grain Crisps aged cheddar & sea salt flavours.

We also blended the Crisps with gluten-free spices to use as a batter or shake & bake. We simply dipped our chicken in egg and placed it in a bag with the breading blend, shook to coat and baked at 350° for 30-45 minutes. We also decided to do this with meatballs which turned out to be a huge hit.Meatballs
A Twitter friend who happens to write gluten-free cookbooks, shared a way to make our own tortilla chips using wraps and we thought they’d be great with many different spices and coatings such as sugar & cinnamon, garlic, onion salt, chives… Let your taste-buds and imagination be the creator and the possibilities are endless.

  • Cut Udis Gluten Free Tortillas into chip size pieces. It’s suggested you brush both sides with vegetable oil but we just poured some over top and tossed it a bit.
  • Add your salt or spices and toss again or simply sprinkle it on after laying them in a single layer on a baking sheet.
  • Bake at 350° F for 4-6 minutes, flip and bake for another 4-6 minutes.

For a simple yet delicious dessert we cut the top off of Udis Lemon Streusel Muffins. Then we carved out the middle and used it to make a Lemon Streusel Strawberry Shortcake. We used the leftover pieces from the middle as a crumble so that it didn’t go to waste.

We really wanted to find a unique hack for our cinnamon raisin bread and decided to turn to Google for ideas and came up with a Cinnamon Raisin Bread Cake With home-made Caramel Sauce that was tweaked to our liking.

Ingredients

4 eggs
1 cup brown sugar
2.5 cups milk
3-4 tbsp. butter
Pinch of salt (1/4 tsp roughly)
1-2 tsp. vanilla extract (GF)
1 loaf Udis gluten-free cinnamon raisin bread
Pinch of nutmeg
Pinch of cinnamon
Handful of sultana raisins

Directions

Cut the bread into smaller pieces. Place the bread on a cookie sheet in the oven at 200°F to dry it out a bit. Mix eggs, sugar, butter, salt, nutmeg, cinnamon and milk together. Add vanilla & raisins and stir.

Place the dried bread in a baking dish and pour the liquid mixture over top allowing it to sit for a few minutes. Sprinkle with cinnamon for garnish and bake for 60 minutes at 325°F. For the topping we used a basic caramel sauce with brown sugar, butter, vanilla and evaporated milk.

We love garlic bread and often use our hamburger buns from Udis instead of bread and decided to go with something simple as well and made Pizza Buns. This is a favourite of ours as it’s easy and the kids can help too!

The heat waves are here and the tasty, ice-cold treats must come out! With so many different kinds of treats out there, what do you choose? May we suggest Ben & Jerry’s ice cream? We recently had the opportunity to review the Innotab 3 Baby from V-Tech and we were very surprised when it came in that our little guy was uber excited to try it out. Riley will pick it up several times during the day and play around on it and we must say that after showing him where to go 1 or 2 times, he has mastered it and knows the V-Tech Innotab 3 Baby better than his parents! It’s definitely one of those toys that young children can easily catch on to.
